Thai Cashew Chicken Stir Fry
2 tbsp peanut oil
1/2 cup raw cashews
1 garlic clove
1/2 onion
200g chicken thighs
2 green onions
1/2 red cayenne pepper

Step 1: Sauce
Mix all of the listed ingredients in a bowl until well combined
Step 2:
Add oil on medium heat using a wok or large skillet over the wok trivet on your Euro Cooktop. Add cashews and cook for 5 minutes until golden and crunchy. Remove from skillet/ wok using a slotted spoon
Step 3:
Turn the heat up to high and add in garlic and onion, cooking for 30 seconds
Step 4:
Add in chicken and cook for 1 minute until outside is fully white
Step 5:
Add green onions (white part only) and chili, cooking for 1 minute until chicken is fully cooked through. Add in sauce and cook for 1 minute until thickens, reducing down to a syrup
Step 6:
Add in remainder of green onions and cashews, tossing for 30 seconds
Transfer to serving dish, serve with your favourite rice and garnish with extra chili and enjoy!
