Grilled Peaches with Bourbon Caramel Sauce
1 cup of granulated white sugar
1/4 cup water
1/2 cup heavy whipping cream, room temperature
1/4 cup butter, room temperature
1 teaspoon vanilla extract
2 tablespoons bourbon
1 teaspoon fine sea salt
Fresh peaches, halved and pitted
Avocado oil or any neutral flavoured oil
Vanilla bean ice cream

Method
Step 1: Bourbon Caramel Sauce
Combine sugar and water in a heavy-bottomed sauce pan and briefly stir to combine
Step 2:
Turn your Euro Cooktop to medium-high heat. Add in sugar mixture (do not stir or touch the pan) until the sugar has caramelized - mixture will go from being completely clear, to a champagne color, to a light golden color, and then to increasingly darker shades of amber. Once the sugar reaches a deep amber color, remove from heat
Step 3:
Immediately begin to slowly pour the heavy cream into the sugar mixture, whisking as you pour to quickly combine the cream. Add in butter, vanilla, bourbon and sea salt and whisk until well combined
Serve immediately or let the sauce cool until it reaches room temperature (it will thicken considerably as it cools), then transfer the sauce to a sealed container and refrigerate for up to 2 weeks
Step 4: Grilled Peaches
On medium-high heat, grill peaches. Brush the cut sides of peaches with oil and place cut-side-down on the grill and cook for 3-4 minutes, or until slightly charred. Repeat to the other side of the peaches
Serve with ice cream, drizzle with caramel sauce and enjoy!
