Cajun Prawn Tacos

Ingredients

1kg medium to large prawns, peeled and deveined
2 tsp paprika
1 tsp thyme
Juice 1 lemon
1 tsp dried oregano
2 tsp minced garlic
1 onion, finely chopped
2 celery stalks, chopped and deveined
1 red chili pepper, sliced
handful of bay leaves
handful of cilantro, extra for garnishing
1 tbsp olive oil
1 tbsp butter
Avocados, as topping (optional)
Thin corn tortillas

Notes

Cook time: 30 mins
Servings 2-4

Step 1:
In a large bowl, toss & marinate the prawns with lemon juice, thyme, paprika, garlic & oregano until evenly coated

Step 2:
In a pan, combine olive oil & butter over medium heat. Add celery, onion, red pepper, bay leaves, & cilantro, and sautee for approximately 2-3 minutes, stirring occasionally.

Step 3:
Add the prawns to the same pan & cook for 10 minutes or until fully cooked

Step 4:
Warm up tortillas in your oven for 2-3 minutes.

Step 5:
Assemble prawn over the corn tortillas and garnish with avocado & cilantro and enjoy!
